The South African Weather Service has advised residents to prepare for cold temperatures throughout the country in the next few days, including snow in high-elevation areas.
This is because of the passage of a freezing front that is predicted to impact the country’s eastern regions.
If it is cold, you can be in a slumber and rely on eating takeaways for several days, or you can master an easy winter recipe that will warm your stomach and heart. Think of hearty casseroles, soups, bakes, and much more.
To help you get started to get you started, here is a roast Thai Sweet potato green soup that can keep you warm in the winter cold.
A roasted Thai Green Sweet Potato Soup
Ingredients
250g sweet potatoes peeled and cut into cubes
50g of sweet potatoes, thinly cut
Olive oil
Thai Green Curry Paste
Four cloves of garlic
Two red onions
A 7cm slice of fresh ginger
Two lemongrass stalks
Two chills from the bird’s eye
2. Tsp of ground cumin
20g fresh coriander
Fresh basil 10g
2 tbsp fish sauce
1. Juice from 1 lime
One tablespoon of olive oil
One teaspoon of sesame oil
500ml vegetable stock
One tin coconut cream
Salt and pepper
Method
Preheat the oven to 180oC.
Set the sweet potato pieces on a baking tray and drizzle them with olive oil. Roast for one hour or until they are soft. Remove the roast from the oven, put it in a blender, and blend or smash. Combine all the ingredients in a blender, and blend until smooth and incorporated.
Add a small amount of water if the mix is too heavy.
Once the mixture is incorporated, put in a saucepan and cook at a low temperature. Add the coconut cream as well as the pureed potatoes and mix thoroughly. Add salt and pepper to taste.
To make crispy sweet potatoes, mix thin slices of potato in olive oil, then sprinkle with salt. Cook at 150oC for 20-25 minutes, until golden and crisp. Serve the soup with freshly chopped herbs, and add chips.
