This simple and quick bean salad takes only a few minutes to prepare, but will keep you full for hours.

The recipe is very similar to one I made for the 30 day salad challenge I did a few years ago.

I was at home the other day and needed a quick and easy meal. I didn’t have time to cook or prepare something too lavish. I just needed something that would fill me up.

I went and opened the fridge and the pantry to see what food was in there. I was going away and wanted to use up some of the fresh food that I had.

I pulled out 2 tomatoes, some parsley, a capsicum and half a lime. In the pantry I found a can of 4 bean mix.

Basically I put it altogether and added some salt, pepper and oil for extra flavour.

The part that took the longest was chopping the capsicum and the tomatoes. Other than that it was just about tipping it all into a bowl. And to save on washing up, just eat straight from the bowl.

This salad makes 2 smaller serves or 1 large one. I ate most of it and then left it on the bench and kept coming back to it over the afternoon.


Quick Bean Salad

1 can 4 bean mix

1 red capsicum

2 tomatoes, diced

1 tbsp olive oil

juice of 1 lime

salt, to taste

cracked black pepper

handful of parsley leaves


Darin and rinse the beans and add to a bowl.

Chop the capsicum and add to the bowl.

Dice the tomatoes and add to the bowl.

Add the oil, lime juice, salt, pepper and parsley.

Stir to combine.


Rinsing the beans is important to help reduce the gas/bloating that some people get.

If you can’t eat beans, use chickpeas or lentils.
