Menus and Gourmet Vegan was the focus of Module 7 and 8 of The Vegan Chef and Lifestyle Training Course. Module 7 was all about menu planning, retreat catering, cafe ordering as well as a more in-depth look at establishing a food business and Module 8 was advanced baking and gourmet vegan.
Module 7 was also a chance to look at our values and ethics, creating elevator pitches and tag lines for our businesses.
The Gourmet Vegan and Advanced Baking were some of my absolute favourite days of this course. Obviously you couldn’t get into the advanced without doing the basics, so these modules were really worth waiting for. I’ve learnt so much over this course and being able to apply that knowledge and the skills learnt to more advanced techniques was rewarding.
Imagine this: an Italian chef, who has only been in Australia for a couple of years teaching you how to make pasta the way her grandmother taught her, with a thick Italian accent. I fell more in love that day with Italian food and had a bit of a girl crush on Georga. (Hope she doesn’t read this, actually I think I hope she does!).
According to her grandmother there are three ingredients in Italian cooking – love, passion and oil of the elbow! We made pasta, strozzapreti, tomato sauce, vegan pesto, sweet potato gnocchi and a simple salad that tasted anything but simple.
We also had Cam from Forage and Graze come and teach us all about South East Asian cuisine – gyozas, sambal, pot stickers, satay sauce and brown bean sauce.
And Janine from Love in a Cake share with us how to create beautiful layered vegan cakes and frosting that would make anyone wish they could eat cake all day long.
