Macadamia Sunflower Balls



1 1/2 cups medjool dates, pitted
1/2 cup oats
1/2 cup coconut flakes
1/2 cup macadamias
1/2 cup cashews
1/4 cup pepitas
1/4 cup sunflowers seeds
2 tbsp chia seeds
1/4 cup macadamia butter
Coconut flakes, extra for rolling


Soak dates in boiling water for 15 minutes.
Place oats, coconut flakes, nuts and seeds in a food processor with the macadamia butter.
Pulse until chopped and blended to your liking.
Blend for longer if you like smooth balls.
Add the drained dates and blend again until combined.
Roll into balls and place on a baking paper lined tray.
Roll in extra coconut flakes.
Place in fridge to set.
Transfer to an air-tight container.
Store in the fridge for up to 2 weeks.
