This is an easy peasy gluten and nut free bar to make. It takes less than 10 mins to mix all of the ingredients together, then just press it into a cake tin and bake for 30 minutes.

This recipe is adapted from the new Thermomix Plant to Plate cookbook, but it is super easy to make without a Thermomix. You don’t even need a blender, if you use flax meal instead of flax seeds.

And, as an FYI, flax seeds are the same as linseeds, just named differently in different countries.

Combine all of the ingredients together and tip into your prepared baking tin.

Use the back of your wooden spoon to press the mixture down firmly before baking.

Once it’s cooked, allow to cool on the bench before slicing. Slicing it when it’s not cool, might make it crumble. The mixture is still a little soft when it’s first removed from the oven.

It’s packed full of seeds, and sweetened slightly with the sultanas. You could also replace the sultans with cranberries.

I like to grind the chia seeds but it’s not essential. Personally, I find the little buggers get stuck in my teeth!

Store the bars in an airtight container. They travel well, just wrap a bar in some plastic free wrap and pop it into your bag for a quick on the go snack.

Gluten and Nut Free Bar

30g flaxseeds (or flax meal)
50g chia seeds
100g pepitas
100g sunflowers seeds
50g sesame seeds
80g sultanas
40g desiccated coconut
1 tsp cinnamon
1 tsp vanilla paste (or pure essence)
100g rice malt syrup


Preheat oven to 160ÂșC.
Line a 20cm square baking tin with baking paper.
Grind flax and chia seeds into a powder.
Mix all ingredients together into a bowl until combined.
Press into prepared tin.
Bake for 30 mins until golden.
Allow too cool to room temperature.
Remove from tin and slice into bars.
Store in an airtight container.


Use a Thermomix or coffee grinder to grind the flax and chia seeds. If you can’t grind them use 30g flax meal, and keep the chia seeds whole.
