Ghost kitchens – Sweets And Greens

Ghost kitchens are a new concept restaurant that has emerged in response to the growing popularity of dining-first delivery, which was prevalent during lockdowns. Ghost kitchens are a great alternative to renting and staffing a full dining and cooking space. Instead, restaurants can rent rented workspaces in shared kitchens that cook exclusively for takeout and delivery.

Euromonitor predicts that ghost kitchens will be worth $1 trillion by 2030. A wave of major players in the food and drink industry is kicking off the market. Chipotle’s Chipotle Digital Kitchen will be launched in November 2020. The prototype digital cafe is only available for delivery and pick-up; no dining-in options are offered.In October 2020, the Midwestern grocery store Kroger announced that it would partner with ClusterTruck, an online-only delivery restaurant. Kroger will supply ClusterTruck ghost kitchens on-premises so that they can produce freshly prepared meals on demand without any service or delivery charges. Kroger Vice President Dan De La Rosa said the partnership was “an innovation which streamlines ordering preparation and delivery.”

DoorDash launched its Reopen for Delivery Program on October 26, 2020. The program helps restaurants that have been forced to close due to the pandemic reopen in virtual kitchens.

Investors have also gotten in on the action. Ghost kitchen company Zuul, which counts salad chain Sweetgreen as one of its clients, raised $9 million in July 2020 to expand its New York City (NYC) after opening its Manhattan location in September 2019. In October 2020, the Wall Street Journal revealed that Travis Kalanick – founder and former Uber CEO – had invested $130 million in real estate for his ghost kitchen startup CloudKitchens. SoftBank’s Vision Fund also invested $120 million in Nextbite that same month. According to CEO Alex Canter, Nextbite is a “portfolio of delivery-only restaurant brands” that exist exclusively on Uber Eats, DoorDash, and Postmates.

NYC startup Kitch launched in January 2020 and hopes to become the Airbnb for ghost kitchens. The startup, which calls itself “kitchen matchmaker,” connects local restaurants with hotel operators, restaurant owners, and other food companies renting out their kitchens at off-peak hours.Euromonitor reports that global foodservice sales have more than doubled from 2014 to 2019. Michael Schaefer, global head of food and drink research, predicts ghost kitchens will define the restaurant industry in the next few years. This is similar to the way third-party delivery has represented the industry for the past decade.
