Black Bean and Lentil Salad

Here’s a salad that can be put together in less time than it takes to order take-away. Some of the staples that I always have in the kitchen are tins of beans and lentils. You can crack open whatever flavour/colour bean you have, toss it with some tomatoes and herbs and have it on a plate within a couple of minutes.


Black Bean and Lentil Salad

  • 1 can black beans
  • 1 can lentils
  • 1 red capsicum (diced)
  • 2 roma tomatoes (diced)
  • ½ bunch coriander (chopped)


  • 1 lime (juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon dijon mustard
  • 1 clove garlic
  • salt (to taste)


  1. Drain and rinse black beans and lentils.
  2. Place lentils, beans, capsicum, tomatoes and coriander in a bowl.
  3. Pour dressing over the top.


  1. Combine all ingredients in a glass jar. Shake and pour over the salad.
  2. Serve immediately.
