Bircher muesli is basically oats and fruit soaked overnight to soften the oats and make them easier to digest.

Are you too busy to make breakfast in the morning? Is there a huge rush every day? Too many things to do and not enough time? And you skip breakfast and then are starving by mid-morning. Bircher muesli is the answer to a healthy, nutritious breakfast that is filling, tasty and easy to make.

All you need to do with this bircher muesli is take it out of the fridge and eat it. You don’t even need to sit down to eat it, just take a mouthful each time you walk past it. (I don’t recommend this, but some days you have to do what you have to do).

Make a big bowl at the beginning of the week and keep it in the fridge. You can either keep it in the big bowl, or transfer it to single serve dishes ready to eat,

I use freshly squeezed orange juice for mine because I don’t think you can beat the taste and freshness, but you can use bottled orange juice, or mix it up and use pineapple or apple juice, or any juice of your choice.

Ingredients

1/4 cup oats

1 tbsp sultanas

1 tbsp pepitas

1 tbsp coconut chips

1/2 apple, chopped

1/4 cup Kultured Wellness coconut yogurt

2 oranges, juiced

1 tsp cinnamon

Instructions

Put all ingredients into a bowl.

Stir until well combined.

Cover and place in fridge overnight (or at least 2 hours)

Notes

Multiply the ingredients by 4.

Place everything into a large bowl.

Stir to combine and place, covered, in the fridge to soak.

Scoop into a bowl to serve
