If you’re looking for an easy spritz with citrus, the combination of citrus and bittersweet liquor (like Aperol, Campari, and Cynar) will be the most popular drink for a reason. The Yuzu Amaro Spritz is a refreshing drink for summer from one of the city’s most talked about eateries, Principe, where industry veteran Alan Wither oversees the beverage program. It’s a floral drink with lime, yuzu soda, herbaceous Amaro rosemary, and honey. It’s a lovely drink that we cannot enjoy enough.
“We just wanted to create something delicious, familiar, and refreshing,” Says Wither. The idea was born from the mix of honey and citrus, frequently in the form of a hot toddy during winter; however, he wanted to make something more suitable for summer. Wither came across the flavor he was searching for in the essential mix of an Italian Aperitivo spritz that is sour, bittersweet, and sparkling.
To make the drink, Wither uses Amaro Nonino, a wine in the Friuli region in Italy produced by a family who have made spirits distillation for more than 100 years. It’s a little sweet, with a warming citrus note, and is most likely most famous for its application in the paper Plane. “Amaro Nonino amplifies the honey and citrus flavors,” says Wither. Nonino’s herbaceous flavor also draws out the woody taste of rosemary added to the shaker to mix with freshly squeezed lime juice,, amaro, and honey syrup.
For the final drink, Pour the shaker’s contents into a glass highball with an ice cube and then top it with a citrusy soda. “We like to use a yuzu and lime soda to give the drink this effervescent zing that shoots you right into the warmer months of spring and summer,” According to Wither. In contrast to lime soda, which is just plain, the addition of yuzu gives it an gorgeous aroma of flowers. Make a large amount of syrup made from honey to store in the refrigerator and prepare this cocktail in just a couple of minutes. We guarantee it will be a regular on the menu for summer parties. — Lucy Simon
