Umami Mushroom Rigatoni
Ingredients
250g of rigatoni pasta (or another pasta that is similar in length)
Four large portabello mushrooms
250g porta bellini mushrooms
Two tablespoons olive oil
2 Tbs butter
One large bunch of fresh thyme
Four cloves of garlic chopped and minced
2 tbsp soy sauce
1/2 cup creme fraiche
Add salt and pepper according to your taste
One lemon to be cut into wedges
Method
Cook rigatoni in boiling salted water until al dente.
Reserve 1 cup of cooking pasta water and rinse the pasta.
While the pasta cooks, Remove the black gills off the inside of the portabellos by using the help of a teaspoon. Cut each portabello in half, then slice every half into four large wedges.
Slice porta bellinis into quarters.
Butter and oil are heated in an iron skillet large enough at a medium-high temperature.
Add garlic, and stir constantly until garlic is fragrant.
Include thyme and mushrooms.
Cook the mushrooms, turning them regularly until they become soft with a golden-brown color.
Pour the soy sauce in and simmer until the sauce is fully absorbed.
Reduce the heat.
Mix in the crème fraiche and add salt, pepper, and a little pasta water.
Mix in cooked pasta and stir gently to coat it with mushroom sauce.
Add pasta water until you create a shiny, silky sauce.
Serve your pasta with fresh lemon juice and freshly ground black or red pepper.
Naan pizza with curried mushrooms with chili and garlic roasted
Makes four naan pizzas
Ingredients
Four naan breads
One head of garlic
250g porta bellini or button mushrooms, sliced
One tin of crushed tomatoes
4 tsp curry powder
300g bocconcini or fior di latte fresh Mozzarella
One fresh chili, cut into slices
Ghee or olive oil to cook with.
Pepper and salt, according to your taste
Sliced onion and tomato and onion, to serve
Fresh coriander, perfect for serving
Method
The oven should be preheated to 180°C.
Cut the top third of the garlic. Could you put it on a piece of tin foil? Drizzle with olive oil, then sprinkle with salt. The garlic should be wrapped tightly and baked for one hour.
